Server offset is essentially a time comparison between the time on the local machine that the agent is monitoring on and the time that the HQ server has. Time sync is fairly important with HQ. You start seeing odd availability results with anything past a few minutes. Also if all your machines are not synced, the HQ server will have to spend extra time processing all the data it receives late into the time periods it should be in.
