I've seen breaks in the performance tab before but it ended up being the result of the Virtual Center service restarting itself. Clearly that's not the issue here as your breaks seem to corospond with a loss of network connectivity. Is there any common area between all of the host that could be causing this, like maybe they all feed into a core switch that may be having some issues?
