So there are 2 things I have found thus far:
1. Single user mode lets the system boot and the SATA HDDs are mountable.
2. Changing to a SCSI controller seems to avoid the issue (the SATA controller has to be removed)
Without knowing an RCA on the RIP/Backtrace, it feels like something to do with the above two in some combination of drivers/etc.
