Ciao,
indipendentemente dal fatto che il tuo esxi sia virtuale o meno, devi poter accedere via vSphere client al suo datastore. Se hai fatto tutto virtuale e non hai usato dei nas o simili è probabile che il disco dell'esxi virtuale sia un "disco locale" della virtual machine.
