Certainly, especially with two hard drives, but the process can be quite cumbersome. This option has no impact at all, as ESX(i) will format the entire hard drive and rewrite the partition table.
The order is important, starting with Windows, as it is less intelligent. Installing it afterwards could overwrite the Linux bootloader, whereas Linux won't do so.
