From the shared Picture, There are those tunnels that are down. If the VM is in out of those tunnel then communication will not happen. So you need to fix tunnel issue first, Try vmkping to remote IP from the ESXi host, if does not work verify that the VLAN used for underlay is tagged to all ESXi host and also check the uplink from the ESXi NVDS they may be down possibly.  Once the tunnels are up check if VMs can ping gateway

I think there is a limitation in NSX if using a default gateway. The Option that i  think insted of using a default gateway you can have static routes. This however will require an NSX-V edge to be connected to more than one Uplink. Although static routes will still be based on the destination network only you have less control on where the source traffic gets routed
With the NSX-V there was an option to add more than one IP address on the same Interface on the NSX-Edge VM. I am not sure if that option is available with NSX-T you can try that assigning more than ... See more...
