Optimizations such as turning off build-to-lossless are on the agent side, so they would be compatible for both. The image cache can also be adjusted for Linux clients, as well.

In that scenario, it would be ideal to put all 3 hosts into the same cluster and merge management and desktops; otherwise, there is no HA or redundancy for the management servers (e.g. you won't be able to put the server into maintenance mode). The management servers typically will not use signficiant resources, as well. Both scenarios would function, though. The vSphere for Desktops licensing will let you run the management servers for your VDI environment. The licensing doesn't cover putting external servers on it, though (e.g. a web server for some other project). Since Composer is a requirement, you will need the Premier bundle.

You could try using SQL Express for vCenter and Composer databases, but it would be ideal to use a full SQL install. Four sockets may be overkill for the DB needs. You will need Windows licensing for vCenter and the Connection server. Composer can optionally be placed on either the vCenter server or standalone. If external access is planned, another license will be needed for the Security Server. In regards to your storage, make sure it is capable of enough IOPS to support the workload. To move Linked Clones, you will want to use the rebalance functionality within View (KB 1028754). For the iSCSI issue, what version of ESXi are you running and how large is the datastore to be added? If you're not running 5, you may be exceeding the 2TB limit for datastores.

What storage vendor are you working with? I imagine any vendor would be more than happy to help you build an ideal solution to meet your IOPS needs. They all have different products, so it's hard to answer this directly. For example, building something like this with a Compellent that uses autotiering and other technologies would be much different than building it for a PowerVault MD series. For drive type, it depends on your budget since SSD is going to be much more expensive. You've done the hard part really in getting your IOPS requirements, so I'd let your storage vendor do the leg work of putting together the optimal budget-friendly solution.

Kind of just have to look at it from a feature standpoint than purely what the pool will be named, unless there is some other functionality they would get from a floating pool?

Are they being prompted to login to Windows again after supplying credentials to the View Client? I've seen some oddities like that if the View Agent got out of wack, for example if VMware Tools was installed after it. To fix, we re-installed the Agent.

View client 5.0 is compatible with the 5.1 connection server; however, 4.x clients are not. That is what you're seeing above.
Is this a dedicated or floating pool?
The functionality is the same in 5.1. You will need to combine your licenses into one 1 key and then apply that. You can do this through the licensing portal on 'My VMware'.

If you're referring to the client, it is used to connect to VMware View infrastructure, which has many components. Unless you have that infrastructure in place to connect to, there isn't a lot you can do. Of course, you could always download the evals and set that up to play with.
The KB linked will hide the View Client's drives not the Virtual Desktop's drives. If you only want it to apply to some users, you'll need to seperate them by OU or other AD-based filtering.
That behavior is normal if you're atleast getting prompted for the cert then a 404.
