Unfortunately, there is no option to uninstall the update. It only lists Visual Studio and .NET updates in the Uninstall Update menu.
Which is what I have done already as said in the post. It's reporting that all cores are at 100% all the time with Task Manager just by itself using 70 - 80% of it.

It's a 12 threaded CPU and VMware Fusion calls them cores. You gotta complain to the devs if you have a problem with that.  And I already did say in the post I tried with different core amounts, and with less cores the VM is a lot slower.  The computer has 64 GB of 2x DDR4 RAM, with 16 GB allocated to the virtual machine. Do you think 2023-09 has changed the RAM requirements or why do you think RAM could be related?

My Windows 11 VM in VMware Fusion has become extremely slow after the 2023-09 update. I tried updating to 2023-10 too which made no difference (updating to it took 4-5 hours). I'm using a Macmini8,1 with 4 cores allocated to the VM out of 12 (CPU is i7-8700). The guest is so slow that I cannot even open anything else than Task Manager, which takes nearly a minute to open (with it then using 70-80% of the CPU). Changing the allocated cores has very minimal effect on the performance.  Not 100% sure is it a Windows issue or a VMware issue, but the issue did start when I updated to 2023-09. I also have a Windows 10 VM with fewer cores allocated, but otherwise has the same settings, and it performs like normal. Updating to VMware Fusion 13.5 hasn't had any effect. What should I try to help make my Windows 11 VM usable again?
Update as of 22.6.2023: After reinstalling VMware Tools and installing dev beta 2, Paravirtualized Graphics works again!

Do you have a link to the thread? That seems very unlikely for them to say that they'd entirely stop supporting macOS Guests on specifially Intel. Apple only last week upgraded the Mac Pro to Apple Silicon, and the 7,1 Mac Pro is still used for virtualization at schools and other enterprise markets. Although, that could just be via Anka or something else nowadays.

Has anyone experimented with Fusion 13.0.2's settings, and found a workaround for getting Paravirtualized Graphics to work with Sonoma guests? For me, it's mostly giving a gray screen, but on one session I was able to get a boot screen and use cmd + v for verbose mode, booting seemed to get stuck at some kind of CPU power management thing. I tried installing Apple's Device Support package for Sonoma guests, but it didn't seem to make a difference. I'm on Intel though, and the update could have been rather intended for Apple Silicon and/or Apple's own virtualization software. Other than the Paravirtualized Graphics not working though, I was able to get the beta booted without graphics acceleration enabled. Maybe there's a VMware Fusion beta that I need to install for better compatibility, but I can't seem to find anything regarding a new tech preview.

Oh my god so that's the issue why my HomePods will not sometimes connect, even just having VMware Fusion open in the background doing nothing causes my Mac to be unable to connect to AirPlay devices. Running macOS 13.2.1 (22D68) with VMware Fusion Player Version 13.0.1 (21139760). It also seems like when I have HomePods connected VMware Fusion will not open if I try to open it.

Previously, I was never able to get graphics acceleration to work with macOS guests in VMware Fusion. I decided to download the TP 22H2 just for fun to see if there's something more than just Windows 11 support being added. And sure enough, without having to do any modifications to my existing macOS Beta VM (I previously had already added the lines to enable AppleGPU), it just works. It also seems like macOS guests just boot every time no problem, where on the stable build there were issues with them getting often stuck on an Apple logo and an empty loading bar. Only one or two things to note: On the setup, it often gives a gray screen if it's loading something for a while. Also, it appears that Paravirtualized Graphics can be so unstable to a point where it crashes the Window Server entirely on the host Mac, but I've only had it happen once. However, if the VM is loading something heavy, it's very likely to freeze your host Mac's applications as well.  Either way though, it does work absolutely better than nothing and it's good to know this isn't just a feature update for Win 11 support.

No, but I am still using the same eGPU. It's possible that VMware Fusion with Apple GPU doesn't properly work with eGPUs, as much as I want to say other virtualization software work no problem, I know VMware has other things to focus on rather than fixing a feature not many actually would even use. I was able to use SVGA mode fine for years as well, but it Kernel Panics Ventura, so it can't really be used at this point in time.

I'm facing the exact same issue where the VM just crashes at setup assistant, more specificly at the point where you choose the region. I have tried adding the Apple GPU but either it gives me a black screen, or an empty loading bar without an Apple logo and VM basically being halted (logs also show SATA going to sleep)

I upgraded to VMware Fusion 12.2.3 hoping mouse scrolling issues would have been fixed, but nope, what 12.2 broke is still here, why can't VMware developers fix this? It shouldn't be that hard if the scrolling was working just fine on 12.1.2 Quick description of the issue: Mouse scrolling isn't 1:1 anymore, and there's no way to change it. I tried to add mks.mouse.pixelScrollSensitivity=1 to the vmx file, with no luck. Discrete scrolling won't work, and scrolling is just slow. This affects all guest OSes as well

After my old macOS VM kept failing to start and didn't work with Apple GPU either, I tried to create a new one, but it still doesn't seem to work with Apple GPU. There's no VMware or Apple logo when booting, and the screen doesn't resize to what I've set it to in the config file (1280x720). Why doesn't it work? I have used Anka before on this same Mac, where the Apple GPU support worked no problem.
