I've seen the same issue, and for now I recommend to not use the ‘remove local profile at logoff’ option in the Advanced UEM GPO for Windows 10.
This function does not work correct on Windows 10, because it leaves traces to the user profile in the HKLM registry. This causes the taskbar and start menu to not work correct on next logon. All modern/universal apps will not work and icons/tiles for those are missing. This included Edge, this app no longer works.
I think these are the keys where user information is left behind:
HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows\CurrentVersion\AppReadiness
HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows\CurrentVersion\Appx
