Deleted/Missing split disk vmdk
I have VM running WIndows 8 under WMware Workstation Pro 15.5.7 on a Windows 11 machine.
Windows Defender somehow deleted one of the split vmdk files. Spent two hours with a MS tech trying to find the missing file, but it is gone.
Is there any way to either, at least attempt to get some data that may still exist on the virtual disks or at most get the VM running again?

Chances to recover files by using a stub .vmdk file for the missing one are usually good. I hope it's not the first one, because this contains most data that make up the partition and file allocation tables.
Please run dir *.* /one > filelist.txt in the VM's folder to get a complete file listing, then compress/zip filelist.txt along with the small descriptor .vmdk file, and attach the .zip archive to your next reply.
