I do not think you can do that.

Moving View-managed desktops between VMware vCenter Servers is not supported (1018045)‌

You can change the composer server, following the procedure for migrating the composer server to a different machine, but vcenter I do not think so.

If your vcenter is configured to the View Admin via a FQDN then you can change the ip address.Not the host name though.
