You can do that if you want to give yourself more headaches and waste your time by having to install a lot of extra stuff you'll only need once (like Xcode, Homebrew, and some open source utility packages). And if you're content with creating a flaky Windows 11 21H2 build because uupdump won't build a 22H2 ISO on macOS.

You'll really be better off by using the Companion Guide and the utility referenced there for a much quicker ISO creation and a much more stable retail channel build of Windows 11 ARM 22H2 (the same build that you get with Parallels, by the way).
