You should create a setup having an ESX node, an iSCSI target appliance, and the latest VCB version. You should be able to perform a VCB-over-the-network backup.

For more fun, you could add a second ESX host and a virtualcenter VM, which would create a very complete demo setup.

And make sure the CPU in the workstation machine has VT (or the AM equivalent) capabilities or you'll be waiting for ages (which would not make a very good demo )
