Only 2x 10GbE isn't the best setup, so I would prefere:
2x 10 GbE: NFS
2x 1 GbE "Frontend" (VMs)
2x 1 GbE vMotion
If you need 10 GbE for VMs, then maybe this mix setup:
1x 10 GbE (active), 1x 1 GbE (passiv): NFS
1x 10 GbE (active), 1x 1 GbE (passiv): "Frontend"
2x 1 GbE (active) vMotion
And if you have big VMs (mostly huge RAM), then I would combine vMotion and Frontend on one vSwitch.
In every solution, I would seperate each type by network and VLAN, so you have 3 portgroups:
* Network 1, VLAN 1: NFS
* VLAN 2: VMs
* Network 2, VLAN 3: vMotion
