Network configuration for Virtual Machines with ESXi 5.0 hypervisor host

I am new to VMware but I do not consider my self a novice in networking. I am using VMware Client to create and configure virtual machines (Win 2012 and Centos 6.3). I am having a very difficult time in being able to see any network data on the Win2012 Server VM. I have not checked the Centos VM but I assume it will show the same case. Installed wireshark on the windows server and can verify that the vm does not received any network data. I see that VM creates a VM standard switch and included in the configuration are the 2 vms as well as the Management network. Where in the hell do you set the ip addresses for the vms? Are the ip addresses for the VMs similar to virtual ip addresses that can be set on a single NIC within a Linix system? As you can probably tell, I getting quite frustrated here and at this point I am happy that I am using only an evaluation copy. I have looked at vmware documentation and do not see the "Manage configuration" tabs within the host configuration section as stated in the docs. I even added a second vmnic to the switch but I now I can not remove the adapter from the switch.

I come from a linux shop and have not dealt with Windows for quite some time. I am going to work with the Linux server to see if I have any luck with that vm.

Any help would be greatly appreciated.
