Is there a way to get a list of available fields that are available for creating custom email templates or does someone have this list they could provide? \
Thanks.

Hi
This is one available KB on custom email templates :
https://kb.vmware.com/s/article/2125759
If you see this article it shows you all available fields that an email has .

Thanks @GayathriS I have seen that KB and have seen a number of examples and have gotten this to work as expected. I'm just hoping there is a more definitive list of usable fields.

The list from the fling looks like it is complete. There is a Readme file on the vROps appliance that lists all of the fields here:
/usr/lib/vmware-vcops/user/plugins/outbound/vcops-standard-email-plugin/conf/ReadMe.txt
And some sample templates located in:
/usr/lib/vmware-vcops/user/plugins/outbound/vcops-standard-email-plugin/conf/default_templates/
