You can hide them from the restrictions payload. I do that on some device today. For whatever reason sometimes apps don't auto populate. Try manually typing in the bundle ID for the app in question. There's resources you'll find via google search that will list all built in iOS apps and their bundle id's.

But it is not possible to hide numbers keynote and pages. I think the reason is, the apps are built in or nativ iOS apps.

You should be able to hide the built in applications as well. For example I tried to hide messages and iBooks applications. That works fine.
