P2V best practice

I have to P2V two of production servers. My quesiton is can I run the convertor during the business hours and cutover later? I just want to make sure convertor wont reboot the physical box upon completion. thanks.

No, it will not trigger a reboot of the physical system. Converter installs an Agent remotely and then does the converting using this agent without changing the system in another way.

Partly depends on your guest OS and what applications are on the servers. Windows 2000 and NT4 I believe both require a reboot before the conversion when the agent installs. 2003 does not I do not believe. Also, once the conversion is complete any new writes to your physical box will not get synch'd up with your new virtual server. So that could make a difference depending on the server function. But a completed conversion does not reboot a system.
