P2V Exchange 2007 Server...Anything to look out for?

I've done a lot of P2V's, but this is the first time doing an Exchange 2007 server.

Should I stop the exchange services during the conversion?

Anything else I need to look out for?

I would definitley stop all services before I performed the P2V. If I had my choice I would build it brand new on ESX but that isn't always an option. I think it's best to make sure there is minimal IO on the box when you start the p2V.
