Does anyone have any suggestions on how to optimize desktop memory and performance on a Windows 2003 Server VM? The applications running in this server require approximately 150 open windows at any one time. RAM and CPU speeds seem to be negligible based on current configurations.
Any help would be appreciated.

If you configure the video memory allocation to 128MB instead of the default 'manage this for me' setting, does this make a difference?
With the VM powered off, Edit settings, Hardware>Video Card>
In the Enter total video RAM, try giving a larger value, ike 128MB has suggested above
i wouldnt start with 128MB i will try 32MB first and then go up

did you enabled hardware acceleration?
