Movement of Large VM to new Storage

Ok, I'm looking for opinions on the best way to do this. I have a large VM, around 2.5TB, that I need to move to a new storage array. The VM in question is a Windows 2008 R2 server comprised of several different hard drives. I know that I can v-motion storage the entire thing, but, considering the size of the VM, it is going to take a really long time. My maintenance windows are only 3 hours long and I am positive trying to do this all in one shot will take longer than 3 hours. Since the server is comprised of multiple hard disks, none of which are greater than 500GB, can I do it one hard drive at a time? Is there a specific reason why I should NOT do it this way?

Again, I am looking for opinions how the best way to handle this. How would you do it?
