Losing all my setting when I deploy a W2K8 server from a Template

I have been working on this all day, and am ready blow my top...here is what I have

vSphere Client 4.0.0

VSphere ESX hosts running Update 1

Template is W2K8 SP2...NOT R2.

Trying to deploy a Windows 2008 server from a template but I am losing all my configuration settings. I.E. Local admin account goes back to "Administrator", Classic view goes back to the Default W2K8 view. I am pretty sure it is due to the syspreping of the VM when I use the customization script since when sysprep runs it deletes the Admin account and creates a new one based off of the Default User (I believe this is correct). I have been Googling my butt off and I see all kinds of fixes, but nothing is working for me.

Starting going down the road of using Microsoft's AIK to build the unattend.xml file...but was getting too frustrated to continue...

Anyone have this figured out?
