How to change disk size when installing VM from a template ?? I am using ESX 4.0 plus Vcenter 4.0

I'm not sure if this is possible, you may have to deploy the machine first and then use the VMware Converter or the vDisk settings in the virtual machien properties.
The Converter will take care about the partition, as well (for Windows guests).

Is not possible to do directly from template deploying (you can only choose to edit hardware BEFORE start the depoly).
The best idea is create a template with only a "small" system disk and put all data and programs on other disk (to add POST deploy).

In VI3 there is the experimental feature to edit virtual hardware in the deploy process. Here, you can edit the disk size. However, this can give some nasty errors where, after deploy, the new VM is using the templates disk instead of its own.
In vSphere, you still have the experimental feature to edit hardware (adjusting memory is probably ok) but the 'Edit disk size' has been greyed out.
