Ignore the red X, it's connected now.
The VM in both vSwitch0 and vSwitch1 has an IP of 192.168.1.162/192.168.1.15 respectively. When I VPN into the local network, I can only ping the 192.168.1.15 and NOT the 192.168.1.162. All firewall rules have been tested and disabled etc. I've essentially narrowed it down to the virtual networking, but I'm a noob. How do I make it so the client can reach the 192.168.1.162?

I solved my issue, my networking setup is correct. It's actually oddly secure. I just have to reach the file share via the IP through vmnic1, which makes sense.
Tough to answer without knowing what the 2 physical NIC ports are plugged into.
