Shrinking a spanned volume in a Windows VM

Hi, I'm pretty new so forgive me if this isn't the right place to ask.

I have a Windows Server 2008 VM and it has a 6TB spanned volume (3 x 2TB disks).  Its usage is only about 27% (~1.65TB).  Here's a pic of the setup:Q10_DiskSetup.png

I'm planning to migrate this VM to another host and datastore but I'm worried about over-provisioning, so I'm hoping to "shrink" this volume to about 3~4TB capacity.  I also don't want the data to be on a spanned volume anymore.

This VM is used in a production environment and a lot of people access file shares on it.

1.  What's the best way to "shrink" this volume and move the data to just one disk of 3-4TB capacity without risking any data loss?

2.  Can I do this while keeping user domain permissions on files/folders?

3.  Will this affect file shares on the server?

The best option here is going to use VMware Concerter to convert this to essentially a "new" VM which is both smaller in size and has an altered disk layout. It will require some downtime as a switchover period is necessary, but ultimately it'll be the better option. Also, do note you will need to reactivate the VM once converted.
