SBS 2003, VMware Tools and ESX 6.5

Cannot install VMware tools on VM after P2V conversion. Just give error about ending prematurely almost immediately.

Any ideas as to why or how I can tell and report back for further assistance?

The VMware tools that come in more modern versions of ESXi do not have tools for ancient, unsupported OSs like 2003. You'll need to search for and download VMware Tools 10.0.12 to install.

My apologies, maybe I missed something in the compatibility chart where 6.5 doesn't support server 2003?

Would I be better off with ESX 5.5 host instead?

It's supported but in "legacy" mode. I was speaking of VMware tools. VMware discontinued shipping binaries for these legacy operation systems quite some time ago. They will also not get updates.
