Hey guys...
I have 4 clusters, each consisting of 3x bare metal running about 200+ VMs total.
The VMs are CentOS all configured to run in level3 which is completely text and only once in a lifetime I'd need to see their console.
My question is... Is it necessary to install VMware Tools? My thought is no, because I'm not aware of anything VMware Tools benefits being offered to a remote Macbook pro...

Yes, VMware Tools is always a necessity unless you have a very, very specific use case which doesn't sound like applies to you. VMware tools provides things like memory management, drivers for paravirtualized devices (which you should be using), and other benefits when it comes to management components.
