vCenter Server should definitely go back at least one major release.

I have a 8.0 vCenter and have managed several 7.0 hosts without any issue.

Definitely it's not a problem.

Are you using vSAN?

The reverse (esxi 8 with vCenter 7.0) will not be the same 🤣

If an ESXi host is managed by vCenter Server, the vCenter version must be the same as the target version of ESXi after the upgrade or higher. VMware vCenter 7.0 can manage ESXi 7.0, ESXi 6.7 and ESXi 6.5, but vCenter 6.7 cannot manage ESXi 7.0 hosts.  MyHealthOnline Portal

Hi,
It should work without any problems. As @scott28tt said: https://interopmatrix.vmware.com/Interoperability?col=2,5891&row=1, (this tool should be your friend 😉 ).
Why do you ask? What case do you have?

Just imagine the day that vCenter 8.0 supports only ESXi with 8.0

hahaha
