Hi,
we have some used NFS4.1 data stores connected to NFS shares from a Netapp FAS2620 and actually those data stores have only one server.
Following Netapp best practices we would like to add an additional IP address to the storage exporting NFS4.1 and that add this address to the server list in the datastore.
We cannot find a way to add this address to an existing datastore.
Is this possible without recreating the datastore?

There is no question of recreating the datastore. Evacuate the datastore, unmount it and now while re-adding mention the required IPs of the NFS filer. You can separate the IPs with comma. With NFS, host does not create the datastore. It will just mount the already created NFS file system.

Evacuate, unmount and remount from my point of view is the same of recreating the datastore.
I'm looking for a way to do this task without stopping or moving the VMs

Unfortunately, there is no way to edit the mount point on the fly!
