Clone datastore onto larger drive

I want to increase the size of my datastore. I have an ESXi 7 server which utilizes a single, on-board, SSD for a datastore. ESXi is installed on a seperate drive. I believe all VM's are thin provisioned. Since I do not have any unused hard-drive connectors on the server, I would like to shutdown the server, remove the SSD that contains the datastore and use a workstation with an external USB 3.1 dock to clone the drive to a larger SSD. I haven't found a comprehensive tutorial on doing this so I don't know if this is doable.

Is this feasible or am I just setting myself up for failure down the road? If this can be done without encountering issues, what's the best software to use for cloning (prefer Windows but I can use Linux). I'm assuming I will have to increase the size of one or more partitions??? Are there other steps involved?
