for hybrid configuration
if each host use one disk group with sata ssd + sas hdd and perform different I/O workload profile tests,
what applications match the specified workloads? is there any document with such details?
EX: "block size 8KB + Read 0%/ + 0% random" workload is suitable for web server?video streaming? system paging?
"block size 8KB + Read 70%/ + 100% random" workload is suitable for database?mail server?or...?
is vSAN different from traditional storage in this part?

This is not an ideal setup and potentially will not be able to cope well with large amounts of workloads that are write heavy.
While the below is for All-Flash, it should give you some insight as to what hardware is ideally required for different workloads on vSAN:

For the purpose of comparing benchmarks with profiles emulate workload types (IOPS of a specific size, type and ratio), no not really.
