VSAN high availability

How does VSAN high availability works?

Does a VM in the VSAN cluster will have a copy just like a fault tolerant structure?

If yes, how many copies can I make per VM and how do I set that?

Good morning, I will make some assumptions.  You're not asking about ESXi HA.  You're not asking about a 2 nodes deployment.

Minimum number of nodes is 3, recommended is 4.  By default vSAN will create 2 copies of the data and a 1 witness.  As long as 2 of the three are accessible you have quorum and the data will be accessible.  Well... that changed a bit in v6 in certain circumstances.  http://cormachogan.com/2015/03/13/vsan-6-0-part-1-new-quorum-mechanism/

As to how you set that, there is default storage policy and can create custom polices and then apply them to VMs or make the custom policy default.
