Good morning, I will make some assumptions. You're not asking about ESXi HA. You're not asking about a 2 nodes deployment.
Minimum number of nodes is 3, recommended is 4. By default vSAN will create 2 copies of the data and a 1 witness. As long as 2 of the three are accessible you have quorum and the data will be accessible. As always, it depends 
As to how you set that, there is default storage policy and can create custom polices and then apply them to VMs or make the custom policy default.
