We have configured the below default vSAN policy. How do we confirm that VMs are actually get protected through this policy.

If you click on the storage policy, then VMs tab it will list all the VMs to which that policy applies.
The Monitor -> VMs and Virtual Disks shows further information about the objects within that policy.
Also, if you navigate to a single VM, there is a VM Storage Policies portlet that allows you to view the same.
