I don't understand what is the difference between a gold master virtual machine template and a virtual machine template ?

AFAIK there is no real difference.  It's just a flag that could be used to indicate that the VM has been somehow blessed or is considered ready for use as opposed to other VM templates that may be works in progress.

There is no impact. It's only informational to make a template as "prefered" for example
