NSX mode ECMP is available under sous vCD ?
If yes, how is possible ? I don't see the option when deploying EDGE under vCD, only HA mode.

Yes, all this does is turns on ECMP for any northbound communication. It assumes you have active/active paths northbound for peering. For example, having provider managed edges that are in ECMP mode.

ECMP Edge(s) does not make sense as Tenant Edge in vCD.

Yes, it's available, but not during the deployment. Must be selected post-deployment and set up. Keep in mind tenant permissions must be established or the provider admin can set it up.

I would Recommend to have one or more Tenant ESGs in non ECMP mode connected Northbound to an ECMP Cluster of Provider ESGs.
Do you need more bandwith than 10 GBit/s from one OrgVdc Network northbound?
Inner OrgVDC also a DLR is possible southbound to the Tenant ESG.
No, no interface more than 10Gb/s but we were thinking of an option to improve bandwitdh for the nsx edge if we need it.
