vCenter Fail to Start, Looking for Instant Recovery VMDK

We have a vSphere 5.5 environment, 1 vCenter. Our vCenter shutdown amidst a backup of itself by Veeam and will not restart. Logs show it is trying to find and open a vmdk file of a Instant Recovery VM we had running. The Instant Recovery VM, a sharepoint VM, had been instant restored and used for a few days while we were dealing with an issue of the SharePoint VM. We ended up restoring from backup the SharePoint VM and stopping the Instant Recovery VM as we did not need it any longer. That night during the nightly backup of the SAN, according to the logs the vCenter VM failed to quisce and shutdown.

Has anyone ran into an issue of this before? The vCenter VM will not restart, we have backups but are reluctant to perform a restore of the vCenter vm due to the stories we have had from other people, VMs disappearing and other possible issues.
