vCenter Converter OS support

Coming from a Hyper-V environment and will migrate to vmware vSphere.

Current guest OS: Windows Server 2012, 2016 and 2019.

Is server 2019 supported OS (NTFS) for conversion (vCenter Converter Standalone)?

As per the latest vCenter converter supported Guest OS 2016 is the latest OS supported.

As per the Release Documents for 6.2 All the OS other than 2019 is supported.

However you can do Migration of 2019, I will recommend you to test after migrating the VM once and confirm if server 2019 VM is working fine on VMware platform.
