I'm converting a IT shop to VM.
We bought vCenter Server 5 standard and vsphere Operations Management 5.5Enterprise PLus
I went to download ESXI 5.5 and notice several format for the same file.
Which file format should I download ?
I would download the .iso format. Then you can burn it to a cd if you want or you can just mount it and extract the files if you need to.

Sounds good, what about the Open Vertical Format (OVF) and Open Virtual Appliance (OVP) ? Ever use them before?
FYI - HP and IBM have images you can download from them that include additional drivers for their hardware. Its usually recommended to do that. Dell may also have the same. I tried installing a VMware ISO of ESXi 5.5 on an IBM x3850X5 and it puked halfway through the install, but the IBM image worked just fine. I have gotten away with the VMware download for HP and Dell servers though.
