Ensure Anti virus and firewalls are disabled on the server.
Are there any remote LUNs mapped to the affected machine, if yes make sure you un present and remove those LUNs while performing P2V.
Ensure VSS writer service is started. Simple yet possible mistake make sure the user account you use have administrative privilege and also open converter with administrative privilege.
Check for disk errors and restart the server once and then try.
Check converter-worker logs for a clue and let us know what you find in the logs.
