So This is the second time I've attempted to update my Windows 10 Build 10041 to 10049. Both times they get to 30% "Applying Settings 0%" and just stopped. It has been like this for over 12 hours, and I'm not sure if it is Vmware or Windows 10. I've attached a screenshot of the issue as well.
Host: Linux Mint 17
Vmware Workstation 11
Guest: Windows 10
So it seems to be an issue with ONLY Vmware Workstation 11. I did the same process in Virtualbox and in 1 hour 10 minutes I was able to use Windows 10 Build 10049. It didn't hang for 12+ hours like Vmware Workstation does.
I don't think it's limited to Workstation 11, I have the same issue in Workstation 10.
Same in VMWare Player.
Well it appears to be an issue with VMware in general... Only product we haven't got confirmation on is whether the issue replicated in VMware Fusion.
Must not be 100%. Upgrade worked OK here on WS 10, Linux host.

Assuming you did blow away the VM what happens if you reset the machine at 30% compiled? It may rollbafck to build 10041 but then again it is possible it will proceed with the installation of 10049. I’ve seen that happen - and on VB as well.
After reboot the machine fell back and used my complete bandwith to upload WER data. I tried this yestday several times. Today the system got another update and....
...this one seems to work. I currently get it done 100%...
No idea what changed...
I had the same issue and I solved it by uninstalling the VMWare tools, running the update and the reinstalling the tools after the upgrade was done.
