With me, "Exit Workstation" (rightclick on the vmware button in the taskbar) is greyed out.
Start->All Programs does not show any entry / program group named vmware or something.
(long shot, maybe it is because vmware is installed on a different partition, I have it on my F-drive not on C:\)
Start -> Find programs 'vmware' does show vmware.exe.
Two questions:
Q1: How to unload vmware entirely? (meaning no processes or services)
Q2: Will launching "vmware.exe" then re-load this all again?
So: in fact, can I -manually- launch vmware?

Try to Hide Icon.
This is vmware-tray.exe that you mention.
Find this exe in task manager and kill it, if you want.

There is an option when installing Workstation: whether to install it in "Start Menu Programs folder", if it's unchecked, then the vmware won't be found in start menu.
Q1: How to unload vmware entirely? (meaning no processes or services)
After the Workstation is installed, there are several services keep running to make sure you can use Workstation correctly(such as networking in VMs...),
so if the processes and services are disabled or killed, it may cause problems.
The services don't consume PC resource much, so maybe let them exist is a better idea?
Q2: Will launching "vmware.exe" then re-load this all again?
It the services are diabled, the service will not be able to restart by itself, so mannally start service is required.
PS: If you don't want to see the Icon, just try to Hide Icon, and the vmware-tray will disappear.
