How to properly configure Multi-Monitor VMs

I have a Windows7 VM that was started with a "p2v" of my previous machine.  It is meant to run full-screen and use all three screens.

I can get it in that state by first clicking the "full screen" icon, and then clicking the "toggle multi-screen" three times and waiting for it to finish between each click.  This is NOT GOOD, as it basically removes and adds different monitors to the running machine, prompting Windows to re-arrange all the windows I have open and scramble placement settings on others.

I need it to stay in the configured three-monitor desktop mode, period.  This VM should not have monitors unplugged or repositioned.  If you need to display non-fullscreen, it can use a scrolling window for the entire desktop which is something that happens sometimes now.

How can I configure the VM to not hot-plug/unplug the monitors, but stay the way it's configured?

(I'm currently evaluating Workstation 11, and own WS10.)
