ESXi 8 it is not an option when creating a new VM with the ESXi 8 ISO as ainstaller disc.
Is it OK to use ESXi 7 instead?
Any reason why it isn't already in the list?

Yes, go with ESXi 7.0.
I can't tell you for sure why ESXi 8.0 is not explicitly listed, but I assume that there are no changes in the VMs' default settings between v7 and v8.

For what it's worth, I usually use several hosts running ESXi 8.0U1c without particular stability problems, keep in mind that a minimum of 8 Gigabytes of RAM is specified as a requirement, with less you may find "hidden surprises" around the corner. Also take into consideration that your HOST system also has its own needs for smooth operation.
I use "ESXi 7.0" as hardware compatibility level (more, practically no need) and as "model" again ESXi 7.0, VMware Workstation 17.0.x on a Windows 10/11 PRO hosts. Maybe if you explain what stability problems you have encountered and the characteristics of your host it may be easier for someone to help you.
