I'm a newbie to virtualization software.
Do you have to predetermine the amount of disk space and RAM to be allocated for a Workstation 6 VM or can you allocate more (or less) as you use the VM over time?

I like allocating the disk space up front - just use a lot more than you need at the time. Allocating more disk is easy in the VM, but expanding the boot partition of your guest can be a time-consuming pain. We just went through this process...no fun.
HDD space is too cheap to skimp on.
You can expand the virtual disk and you can adjust the amount of memory allocated to the virtual disk, if at a later time decide if you nned more disk space or more or less memory
