To make sure, you mean the SW installed inside the guest OS running on the VM?

Are these Windows or Linux guest OS?

Which vSphere version are you using?

With the VMware Tools 11 installed, you can use the guestinfo.appInfo variable.

See Application Discovery in vSphere with VMware Tools 11

If you don't have VMware Tools installed on your VMs, you could use Invoke-VMScript cmdlet and use the guest OS method to retrieve a list of installed SW in the guest OS.
