The NSX-T bare metal edge is the only scenario where NSX-T actually has direct access to the physical NICs and currently only supports the handful of Intel NICs listed in the System Requirements section of the install guide.
Virtual edge form factors use the VMXNET3 vNIC which already supports DPDK so any DPDK enabled pNIC that's supported by the hypervisor should provide adequate support as it's abstracted anyways.
That said, from a performance standpoint features like hardware offload for the Geneve encapsulation and RSS will be some additional things to look for to get some overall improvements (which you can find in the VMware Compatibility Guide - I/O Device Search)
