Any  specific recommendations for setting up lab for learning NSX, Later also vSAN

I recommend you use HoL from VMware

Based on the use cases which you are planning to implement and test you will certainly need good amount of compute and storage capacity. However you can take care of below points if you don't have enough resources.

1) Ensure all VM's are deployed in thin format- Management and Workload

2) Virtual Machine testing ,use DSL(Linux distro) - Can't test all features with this -L2/L3/LB/DFW is possible -not identity based IDFW.

3) NSX Manager resource can be tweaked ,but don't go too low - 1-2 VCPU with 4-5gb Ram is required

4) Deploy Just one controller and limit the resource to 1 vCPU and 1-2 gb Ram

5)For Edges - use compact version and test features like HA only if it is needed

VMware Hol Labs are great so use  it whenever situation demands - advanced routing,two site testing with DR etc etc

Are you planning to prepare for any exam specific or just to play install/configure/manage?

VMware HOL gives specific tasks but not ICM based labs.

You can try some of the nested labs followed by building solid lab.

HOL I have looked and that looks good.

At the beginning I want just to play install / configure / manage

Nested Lab is perfectly fine. Have a host with 64 GB memory
