Is there any way to get a full packet capture in NSX for a VM or vServer?

..and output it to a pcap or other format?

This feature was just added in NSX-V 6.4.  The Packet Capture section of the admin guide shows the steps to use this.

That is great news. We'll be upgrading in the coming months.

If you are not in NSX 6.4 yet, you can use the pktcap-uw tool which described in this KB: Using the pktcap-uw tool in ESXi 5.5 and later (2051814) and NSX-v Operations Guide, rev 1.5

For packet capture in NSX Edge, you can do a debug as mentioned in other thread.

There is a good blog post that walk through the NSX Edge packet capture here: NSX-v: ESG Packet Capture – SneakU
