There are multiple layers of ECMP,
How you chose to achieve this is up to your design.
It's pretty hard to suggest a common approach, its very much dependent on customer requirements.
Customers usually start off with 2 Edges, if there are throughput or specific requirements you can look at scaling horizontally or vertically. But going straight to 8 Edge nodes unless properly discovered is overkill, as could 4 potentially be.
The question is... why are you trying to do this? If you are..
I agree with Shashank. At the end of the day, it all depends on Customer's requirement & use-case. I too suggest Customer to start with 2 Edge Nodes with 4 path ECMP & then based on the utilization add more Edge Nodes to the cluster.

Last question, is below diagram looks good if we need to setup 8 way ECMP with 8 Edge nodes, 4 Edge Node points to ToR1 VLAN300 and rest 4 points to ToR2 VLAN 400
