I have "Acrobat Acrobat"-Software on my Mac. (the one you can edit pdf's)
Is there a way I can open pdf's with this software directly when I'm in Fusion (Windows 7)?

Yes its possible.
For this feature to function, one of the conditions is to enable "Open your Windows files and web links using Mac applications"
This can be enabled for a Virtual Machine at
Virtual Machine > Settings > Default applications
